Yellow perch Roe

Caught some nice ones today, all females, sacs are 2 inches, is it too early to fry them up?

You ate the roe? I've never heard of eating perch roe...

Amazing it was, and to think, as i am catching yellow perch, a large rainbow swims by in 2 feet of water!
