If you want to get THE MOST out of your depth finder, adjusting the sensitivity based on the current conditions you are fishing is best. The deeper you are fishing the higher you want your sensitivity, plus if you are actually looking to see fish and or structure better, manuallly setting the sensitivity is the way to go.
