Don's Catfish Stew Recipe for Catfish

Title: Don's Catfish Stew

Servings: 4
Difficulty: Intermediate
Prep Time: 15 min
Cook Time: 45 min or until done
Ingredients: bacon, onions and potatoes and catfish fillets or whole. If whole, use LARGE fish because you dont want to spend half you meal picking bone out ya mouth. Cayenne pepper, salt, pepper, ketchup, and Texas Pete hot sause.
Directions: slice both onions and potatoes like you would a tomatoe for a hamburger.

cook bacon in bottom of stew pot until grease lighty covers bottom of stew pot.

layer as follows: potatoes, onions then fish. keep adding layers until pot is almost full maybe 3/4

Fill pot with water

the amount of ketchup, hot sause, salt, pepper and cayenne pepper is up to you. add to taste. Like Justin Wilson I like lots of anything thats hot.

Bring to a boil then turn your heat to med to med hight for a simmer.

cooking time depends on how much you make. you will know by sticking the fish and potatoes
Other Notes: Dont stir, because your fish pieces will come apart. thats why the bacon is in the bottom. to help aid against scourching. just dont have the heat to high.
